DIY: Thai Tea Crème Brûlée

Lately, my friend Xia has been sending me tons of cooking and baking TikTok videos. I’m not on TikTok, but I do find the videos interesting and inspiring to watch. One video featured a recipe for Thai Tea Crème Brûlée by professional chef, Brandon. Now, I’m no professional chef and I didn’t have all the same ingredients on hand, so I executed a simpler version of the recipe. Instead of Thai tea leaves, I used instant Thai tea mix, which for flavor purposes, turned out just fine.

To create my Thai tea Crème Brûlées, I used this recipe as the base. I mixed up the condensed milk and evaporated milk proportions, and I also didn’t have any evaporated milk, but even still the Crème Brûlées turned out amazing. For a full photo gallery of my baking process see below:

Step 1: Gather ingredients. I did not have evaporated milk or Thai tea leaves, so I used instant Thai tea mix instead.

Step 2: Mix together water, sugar, salt, heavy cream, condensed milk, Thai tea mix, and combine slowly with egg yolks.

Step 3: Bake in clean ramekins set in about an inch or two of water.

Step 4: Remove from oven and refrigerate for a few hours to set.

Step 5: Top with sugar and torch to brown.

I swear baking has become my second love language. Every time I try a new recipe, it also gives me a greater appreciation for all the work that goes into perfecting and developing the perfect baked good. As with so many things in life, the best things in baking take time!
