DIY: Matcha Cheesecake
Cheesecake is one of my brother’s favorite desserts. For special occasions, we love to pick out various flavors from Cheesecake Factory and naturally, we claim our own slices.
Since I love all things matcha, I decided to try to make a matcha cheesecake. For the base of my cheesecake, I used the recipe here. To add the matcha flavor, I added about two tablespoons of matcha powder. The longest part of the process is the baking. Since the recipe requires a lot of eggs, it’s super important to make sure that the cheesecake bakes all the way through. Also, per the instructions, I let my cheesecake set overnight which is a long time to wait to have a slice of cheesecake.
Overall, I’m super happy with how my first attempt turned out. Also, this recipe is quite large, so I usually have extra servings to make mini cheesecakes to give to friends or neighbors. For a full photo gallery of my baking process, see below:
Step 1: Gather Ingredients.
Step 2: Mix cream cheese and sugar together. It’s super helpful if you have a Kitchen Aid mixer. I only have a hand mixer at the moment, so it’s a bit difficult to smooth out the mixture by hand.
Step 3: Prep graham cracker crust. Crush graham crackers and mix in bith butter and sugar. Flash bake for a few minutes.
Step 4: Mix in eggs and egg yolks, vanilla extract. For the purposes of this recipe, I skipped the sour cream.
Step 5: Add in the matcha

Step 7: Decorate with fruits and top with more matcha powder.
