DIY: Fall Focaccia Bread

A few months ago, I saw beautiful pictures of decorated focaccia bread on Twitter. Since the start of quarantine, I have knitted a top, started a vegetable garden, up-cycled some vintage clothes, and baked macarons, but I have yet to bake any bread. So after finding a recipe on Sugar Geek Show, I decided to try it for myself!

Tips:

  1. Read all the instructions first before starting. The process of letting the bread rest takes a whole day, so in total it’s a two day process to make the finish product.

  2. Trader Joe’s has active yeast! I know it was in short supply earlier this year, but you can find active yeast packs at TJs.

  3. When prepping the bread to decorate, I sprinkled the bread with crushed garlic for extra flavor.

Step 1: Prep the bread mixture. Add warm water, yeast, sugar, olive oil, sugar, salt, and flour

Step 2: Mix/knead dough until fully combined.

Step 3: Roll up the dough and place in a bowl to rise for 1-2 hours.

Step 4: Let the dough rest overnight in the refrigerator.

Step 5: After the dough has set overnight, wait about 30 mins for the dough to return to room temperature. Cover the pans with olive oil and divide up the dough.

Step 6: Prep your toppings! I used red onion, mini peppers, pepperoni, parsley, parmesan cheese, baby tomatoes, chives, and olives. For herbs, I used Rosemary and Thyme. Make sure you used plenty of olive oil to cover your toppings.

Step 7: Bake! For my first attempt, I think I used a bit too much olive oil on top but depending on how you like your focaccia bread, apply according to your preference.

Overall, I found baking bread to be super meditative and I will definitely be attempting it again. Baking bread is an art form in itself and there are so many possibilities!
